This is a great chocolate frosting. Smooth and rich! I was always afraid of making ganache. Just the word itself made me think of serious French pastry chefs! But, guess what – it is easy. Place the ghirardelli chocolate pieces into a heat proof bowl. I use my Pyrex 1 qt. glass measuring cup. You need a heat proof bowl because you are going to pour boiling cream over the chocolate pieces. Put the butter and cream into a saucepan. Bring to boil over medium heat be sure to stir while heating so the cream will not burn on. Pour the boiling cream over the chocolate pieces. Let stand for about 5 minutes. Gently stir until smooth. Let rest another 5 minutes. Stir, it should now be ready to pour over your cake. You can let it rest longer if you want a thicker frosting, one that will be spreadable. It is yummy!
