These cupcakes combine chocolate cake, cheesecake and chocolate chips for a delicious combination. They are quick and easy to whip up, and they’ve been a family favorite for years! Preheat oven to 350 degrees. To make the cream cheese mixture, combine 8 oz. of cream cheese with 1 egg and 1/8 tsp. salt. Add 1/3 cup of sugar and mix with electric mixer or whisk. Stir in 6 oz. of cream cheese. Set aside. To make the chocolate cake batter, in a separate bowl combine 1 1/2 cups of flour, 1 cup of sugar, 1/3 cup of oil, 1 tsp. vanilla, 1 tsp. baking soda, 1/4 cup of cocoa, 1 cup of water and 1 tablespoon of baking soda. Fill greased and/or lined cupcake cups half full with cake batter. Spoon 1 tablespoon of cream cheese mixture on top of batter. Bake at 350 degrees for 20 minutes. Yields 16-20 cupcakes.
