These chocolate candy cane cupcakes, frosted with whip cream and topped with crushed candy canes, are the perfect dessert to serve during the Christmas holiday and winter months. Preheat the oven to 350 degrees. Chop 4 of the chocolate squares and set them aside. Pour the cake mix, pudding mix, eggs, sour cream, oil and water in a large bowl and beat it with a mixer on low speed until moistened. Once it is moist, turn the mixer to medium speed and mix for 2 more minutes. Stir in the chopped chocolate and 2 tablespoons of the candy canes. Place the paper cupcake liners in the cupcake pan and then spoon the batter into them. Place the cupcakes in the oven and bake for 20-25 minutes or until a toothpick inserted into the center of the cupcake comes out clean. Remove the cupcakes from the oven and cool completely. Frost the cupcakes with the cool whip. Melt the remaining chocolate. Drizzle the melted chocolate over the top of the cupcakes. Top with the remaining chopped candy canes.
