Made with baby Yukon gold potatoes and two types of chile peppers, chipotle smashed potatoes goes great with any protein. Recipe serves 2. Heat a skillet over medium heat. Add chopped bacon and sliced leeks to the skillet. Cook bacon and leeks about 8 minutes, or until tender. Remove bacon and leeks from heat, set aside. Bring 6 cups of water to a boil. Toss in 1 tsp. of salt to season the potatoes. Place potatoes into boiling water and cook for about 15 minutes. Stab potato with fork to determine softness. Drain water from potatoes and begin smashing with 1 tbsp. of butter and milk. Smash bacon and onion into potatoes, and slowly add chile peppers and salt & pepper as needed.
