Want to show off you Chinese food? Chow Fen is undoubtedly the most popular dish. Take your rice out of the refrigerator, use spoon or chopsticks to loose it a bit. (rice sometimes stick together into a chunk if you leave it in the refrigerator) Break 2-3 eggs into a big bowl, beat with chopsticks or fork until the yolk/white mixed well Heat up 1-2 tsbs of oil over medium-high heat for 1-2 min Pour eggs in, let it spread all over the whole pan. Immediately, add 2-3 bowls of rice on top of the eggs. Use the back of the spatula or potato masher to evenly spread out the rice. This step should take you less than 15 sec. Use spatula to mix eggs and rice well. Add about 1/3 tsp salt, OR, 1 tsb of soy sauce, and mix quickly with the rice/egg. Scoop into bowls and serve. Bon Appetite.
