Homemade chicken stock makes soups more flavorful and rich. This is an easy recipe for a pressure cooker and uses common ingredients. Place your chicken carcass into your pressure cooker. Top with a couple roughly chopped carrots, onions and celery. Add herbs to your liking. Oregano, basil and marjoram all work well for chicken stock. Add salt and pepper. Cover with water to your pressure cooker’s marker. Put the weight on the lid and lock the lid into place. Put the pressure cooker on the stove and turn the burner on high. Watch this carefully! Once the weight starts to rattle, turn the heat just low enough so that it continues to rattle. Cook for 25 minutes and turn the burner off. Leave the cooker to cool until the safety valve on the cooker is released. Open the pressure cooker and strain your chicken stock.
