Using up leftovers is a creative process, and can be fun. If you disguise leftovers so the kids don’t know they are leftovers, you are ahead of the game. Here is a simple way to make delicious chicken soup with leftover chicken pieces. Step 1 Place leftover chicken pieces in a large stockpot and cover with water. Add two bay leaves, and one teaspoon each of marjoram and thyme. Step 2 Cook down until the meat falls off the bones. Pick out the bones and leave the meat in the broth. Step 3 Add one and a half teaspoon of seasoned salt and the baby carrots. Cook for about 20 minutes or until the carrots are almost done. Step 4 Finely chop the fresh parsley and add, along with the corn and green beans. Cook for another ten minutes. Step 5 Add either 1/2 cup of rice or 1/2 bag of noodles. Cook until rice or noodles are soft. Step 6 Taste the broth and adjust the spices accordingly.
