This dish is often made using almond sauce instead of peanut or it can be made with chiles instead of sherry. It is very good when served with potatoes that have been baked. In a large skillet, heat oil and add the chicken. Saute the chicken until it turns a nice golden brown and then transfer the chicken to a large pot with the bouillon cubes and 2 cups of water. Cook over medium heat for about 30 minutes or until the chicken is tender. Remove from heat and drain the stock into a bowl to be used later. The skillet should have some drippings remaining, so use this to saute the onion, garlic, allspice and cinnamon. Once they are browned, remove them using a slotted spoon and put them in a blender. Into the same blender add the peanuts, 1/2 cup of the stock that you set aside and the tomatoes. Blend these together until it is very smooth and then add 1/2 cup dry sherry. Pour the sauce over the chicken in the pot. Cover the pot and cook over a low heat for about 15 minutes until the sauce
