Nothing smells like home-cooking more than a warm bowl of chicken soup. Unlike your traditional chicken noodle soup, this soup is free of noodles so it is an excellent soup for carb-watchers! It is the spices that make this soup a winter time favorite at our house! Melt the butter in a large sauce pan. Add the chopped onion and red pepper flakes. If you want more spice to your soup, you can add more pepper flakes but be careful, they will add to the heat the longer the soup sits in the bowl. When the onions are almost translucent, add the chopped garlic and heat through. Be careful not to overheat the garlic or the garlic will turn bitter. Pour the chicken broth into the sauce pan then carfully add the chopped carrots and diced chicken. Stir until blended and bring to a boil. Simmer 15 minutes or until the carrots are soft. Pour soup into serving bowls and garnish with chopped green onions.
