This article will tell you how to make delicious chicken enchiladas. Preheat your oven to 350 degrees. Cut chicken into strips fry in pan with seasonings until done. Add onions and Chiles with chicken and fry until soft. In a large bowl mix the tub of sour cream and can of cream of chicken together add olives and chicken mixture. Cover the bottom of the baking pan with a layer of the enchilada sauce. Fill tortillas with the mixture and sprinkle with cheese. After you have filled your tortillas, spread the remaining sauce and cheese over the top of the enchiladas, cover with foil and bake for 35-40 minutes. Remove the foil the last 5 minutes of bake time. Let set for 10 minutes before serving. Serve with a spanish rice, or salad.
