This is a recipe that has been in my family for years. It’s a big hit every time at our family holiday parties and at the office potluck brunches. Want to impress your family or co-workers at your next get together? Try this recipe! Boil the whole chicken in a big pot of water. This will usually take about 2 hours. Make sure the chicken is completely thawed. When the chicken is done boiling, let it cool for 20 minutes. Once cool, take the chicken out, and shred it using a fork. Set aside. Preheat the oven to 350 degrees. Chop the onion and slice the black olives. Sauté the onion and black olives over medium heat. Add the shredded chicken. Add 1/4 can of the red enchilada sauce. Remove from heat and set aside. In a small sauce pan, heat 1/4 c. vegetable oil. “Flask fry” each tortilla by placing one at time in the hot oil, wait 10-15 seconds, and turn over. Remove the tortilla and spoon the chicken mixture into the tortilla. Add a spoonful of the shredded cheese, and roll the tortilla up
