How Do You Make Cheesecake Muffin Cups?
This cheesecake muffin cup recipe was given to me by a Pastry Chef who prepares it for a 5 star restaurant. Creamy, smooth and just the right amount of richness, this will no doubt be your favorite cheesecake! Preheat oven to 325 degrees F. Place 24 muffin baking cups into muffin tins. In a large mixing bowl using an electric mixer, beat the cream cheese until smooth. Slowly add the granulated sugar to cream cheese, continuing to beat until the sugar is no longer visable. Add eggs one at a time, beating after each addition. Add vanilla extract and lemon juice to cheesecake batter; beat for approximately 30 seconds. Add the slightly cooled butter, followed by light cream; beat just until combined. Spoon the batter into prepared muffin tins — leave only 1/8- inch space between batter and top of muffin papers. Bake cheesecake muffin cups for approximately 70 minutes. Test for doneness — when toothpick inserted into cheesecake comes out ALMOST clean, remove from oven. Place muffin tins o
