I love the Melting Pot restaurant’s cheese fondue, but had a dilemma. Sometimes I just wanted the cheese fondue as an appetizer – typically when I was home in the evening and didn’t feel like getting out. Cost was another problem – the Melting Pot is very proud of their cheese fondue – to the tune of $16 for cheese fondue that serves 1-2 people. Another problem – I don’t own a fondue pot. Undaunted, I experimented and have a hit recipe according to my family. You too can create a yummy do-it-yourself-at-home version of cheese fondue. It’s quick, moderately easy, and you won’t need special equipment. My method doesn’t required a fondue pot. Pour chicken broth and white wine in top of double boiler and heat until boiling. Reduce heat and gradually stir in grated sharp cheddar cheese. Stir and add cheese repeatedly until mixture thickens to the consistency you want. Add sherry and blue cheese crumbles while continuing to stir the cheese fondue. Turn off heat, garnish top of cheese fondue
