How Do You Make Chambord Candied Sweet Potatoes?

1

Using Chambord, a raspberry flavored liqueur, with baked sweet potatoes turns the average candied dish into a unique and special one. Fresh sweet potatoes are used here and boiled until softened, but canned sweet potatoes could also be used. Boil the sweet potatoes in water until they are fork tender. Drain and cool slightly. Peel potatoes and cut into slices about 1/2 inch thick. Place in a buttered casserole dish and sprinkle with sugar. Drizzle the Chambord over the top and add a dash of salt over the top. Dot with the 2 T of butter and bake in a 375 degree oven until bubbly, about 20 minutes. Serve warm.
