Cassoulet is a French white bean casserole that is famous for being rich and slow cooked. There are infinite recipes for cassoulet but the traditional recipes call for duck confit, lots of pork, wine and a cassoule – the cone shaped pot that it is named for. My version doesn’t call for placing orders with online gourmet stores for the duck confit and the cassoule but it is a fantastic casserole. In a large pot, fry bacon slices until crispy. Remove bacon onto paper towels to drain, crumble into bite-sized chunks. In bacon drippings, fry smoked sausages over medium heat until skin starts to brown and crisp. Sausage will not be done through. Remove sausage from pot and slice into 1/4 inch rounds. Lightly salt and pepper chicken pieces. Raise heat under pot to medium high. Brown chicken on both sides.
