Carrot-raisin-peanut butter salad is a vegan recipe that can be prepared quickly and easily with ingredients that are typically on hand. Soak raisins in a bowl of warm water to soften them if they seem dry. Peel and grate the carrots into a mixing bowl. Measure and add ⅓ to ½ cup of peanut butter to the grated carrots. Start with the smaller amount and add more later, if desired. The peanut butter can have a tendency to clump, so add a little at a time and mix with the carrots well.
