Buy 4-5 green plantains. Wash and cut them in half. After peeling them cut them into slices and then back into narrow rectangle pieces as if you were making French fries. You will need a deep frying pan. Add oil stir until golden brow, remove and place onto paper towel. Wash and Peel Plantains. Then slice them into the shape you desire. It is best when they are done in long slices and thin. Fill a deep frying pan with frying oil and then heat oil. When hot place the plantains in to fry. Make sure the oil is not too hot so it does not burn. When the fries are golden brown they are ready to be removed and then placed onto a paper towel to absorb the oil. You can sprinkle with salt right away. You can add a pinch of salt, curry powder, black pepper, garlic or even lemon juice to add flavor. It is most delicious with ketchup sauce, Hot pepper mixed with ketchup or even tamarind sauce.
