This is an easy recipe for caramelized plantain bananas (platanos). If you’ve never cooked plantain bananas this way (or any way), you have been missing out on THE best side dish in Latin American cuisine. Plantain bananas can sometimes be found in a regular supermarket, but you may have to buy them at a Mexican market (Food 4 Less always has a fresh supply). If the bananas are even a bit green, you will have to let them ripen. And then let them ripen some more. They should be fairly soft (green plantains have the texture of potatoes, and they stick halfway down your throat). Peel and slice bananas into thin strips. Heat skillet and add 2 Tbsp butter til melted. Place banana slices in butter and let it cook until browned. Lightly sprinkle bananas with cinnamon and sugar. Turn plantain slices over and cook another 5-10 minutes. Add another pat of butter. Simmer until almost dry, then add a splash of water. Cover and continue to cook until liquid is gone. Serve as a side dish to any meal
