Onions are both healthy and nutritious. They taste incredibly good, too. Although some people like to eat their onions raw, I prefer them cooked. The sharpness of onions seems to disappear when they are cooked. They become slightly sweet. Caramelized onions add flavor to chicken, pork and refried beans, and in my opinion there are many other foods caramelized onions taste good with. Because I always thought the process for making caramelized onions was an involved one, I put off making them for the longest time. When I finally did cook them, I found out caramelized onions can be made quickly and easily. Heat extra-virgin olive oil in frying pan over a medium-high flame for one minute. Put the sliced onions in the pan and cook for 3 minutes. Add the honey and vinegar and continue cooking the onions until the honey caramelizes (about 15-20 minutes). Serve on or alongside the meat of your choice, or with refried beans in a burrito.
