How Do You Make Candied Lemon, Lime, And Orange Peel?
One of my favorite childhood memories is being taken to the confectionery counter of Marshall Fields in Chicago where we purchased freshly candied orange peels dipped in chocolate. Once candied, the peels of all three of these fruits add wonderful interest to cookies, biscotti, ice-cream, and as garnishes. They are delicious eaten plain, dipped in dark or white chocolate, and are welcome gifts for friends who bake a lot. Freshly made candied fruit peels are superior in flavor to those you would buy ready made, much cheaper, and they are very easy and quick to make. Please read the tips (at end or article) before starting. * Wash the outsides of the lemons, limes, or oranges to be peeled. * Grate the outside of the peel very, very lightly to release the oils. * Remove the peels from the fruits in as large pieces as possible. * Cut the peel into desired width strips (see tips) until you have 2c. Remove most of the bitterness from the peel by REPEATING the following process 3 to 5 times d
