To begin, in a large wok or heavy cast iron skillet, heat olive or sesame oil. Oil needs to be hot enough to cook vegetables, but not so hot that it is smoking. Gently, add finely chopped cabbage, finely shredded carrot, and fresh bean sprouts. Use a wooden or metal utensil to gently toss vegetables. Continue to toss and cook vegetables for about two minutes. Next, stir in 1/8 cup soy sauce, firm tofu cubes, and garlic powder. Reduce heat to low, cover wok or skillet and let stir fry simmer for one minute. After one minute it’s a good idea to toss the stir fry again. Recover dish and cook for an additional minute. Uncover wok or skillet. Check to make sure vegetables are tender. Then, transfer cooked tofu and cabbage stir fry to plates and serve with a side of steamed rice or noodles.
