How Do You Make Bruschetta With Fresh Mozzarella?
This Italian appetizer is a family favorite and this variation made with fresh mozzarella will leave everyone wanting more! Cut tomatoes in half width-wise and remove seeds. Cut again length wise and then into 1/4 in pieces. Transfer to medium sized mixing bowl. Remove peel from the garlic cloves and chop into fine pieces. Transfer to small bowl. Add 1 Tbls olive oil 1/2 tsp salt and 2 Tbls white vinegar to the garlic. If preferred, use balsamic vinegar for a more traditional taste. I find the white vinegar makes for a cleaner taste. Using scissors cut one sprig of parsley into small pieces. You can also do this with a knife on a cutting board if preferred. For a more traditional taste you can substitute the parsley with basil. Also if you don’t have fresh parsley you can substitute with dried parsley flakes. Mix the parsley into the garlic bowl and then pour over the tomatoes.
