They are great for parties or having friends over. 1 egg 1 cup firmly packed brown sugar 1 teaspoon vanilla 1/2 cup flour, sifted 1/4 teaspoon baking soda 1/4 teaspoon salt 1/4 cup coconut, flaked Spray an 8-inch square pan with cooking spray. In a mixing bowl stir together the egg, sugar, and the vanilla. (Do not beat). Quickly add the flour, baking soda, and salt. Stir to mix well. Do not over stir. Blend in the coconut. Spread the mixture into the prepared pan. Bake at 350-degrees for 18 to 20 minutes. The cookies will be soft in the center. Cut cookies while they are still warm into squares. It will be easier than waiting until they are cooled. This recipe makes 16 squares. Your friends will ask for this recipe.
