How Do You Make Breakfast Grits Known As Nassau Grits?
This is one of my favorite breakfast meals. A friend made the grits for me about 15 years ago while vacationing in Florida and I couldn’t believe something so good could be so easy to make. This is an excellent brunch dish. I prefer to use ham but diced cooked bacon can be used or browned sausage. But I find that the smoked ham to be the best meat for this dish. You may find yourself swiping the bowl with bread to get every last bit of these grits. Follow the directions on the box of grits for 4 people. Dice the onion and set aside. Seed the tomatoes and dice. Dice the ham. If using sausage, brown the sausage and drain the fat off. Sauté the onions, tomatoes and ham in a skillet with 1 tablespoon butter till the onions are translucent. Add this mixture to the cooked grits along with the 1 tablespoon butter. Taste and adjust salt and butter if needed. Serve immediately while grits are still hot.
