How Do You Make Blue Ribbon Blueberry Muffins?
Picking native blueberries is one of the rites of summer in New England. From late July through August, New Englanders gather this antioxidant-rich fruit to make everything from pies to pancakes. On Cape Cod, blueberry muffins are so popular they merit their own category at the county fair. Here is my recipe for old-fashioned blueberry muffins. They are blue-ribbon winners: Preheat oven to 400 degrees. Liberally grease muffin pan or line with baking papers. In a large bowl, sift together dry ingredients. If you prefer not to sift, whisk together the dry ingredients. In a separate bowl, lightly beat the egg and then whisk in the milk and melted butter. Be sure to temper the egg mixture by adding melted butter slowly; otherwise, the heat of the butter could cook the egg. Make a well in the center of the dry ingredients.
