How Do You Make “Berry-Less” Strawberry Preserves?
Many years ago I found this recipe for strawberry preserves made without strawberries. I had my doubts about the likelihood that it would be a recipe I would want to keep but curiosity made me want to try it at least once. We always have plenty of green tomatoes at the end of gardening season that we are unable to use before cold weather ruins them. I thought this might be a good way to make use of those end of season tomatoes. I made one batch of these preserves and shared a few jars with friends and family. I don’t remember how many jars I ended up making that first year but I do know I ended up searching for more green tomatoes than we had in our garden in order to make all the jars of preserves that I had requests for. Wash and grate 4 cups of green tomatoes. Put them in a pot with four cups of sugar. Heat until mixture comes to a boil then boil for ten minutes. Remove tomato and sugar mixture from burner.
