Purchasing new barbecue pits can be very expensive. Most are built for charcoal and are not usable with cooking woods such as pecan, oak, hickory, apple, cherry or mesquite. Wood-burning pits are good for smoking and direct cooking. They will deliver both radiant heat and convection heat to reduce cooking times and increase smoke penetration with enough separation between food and flame to prevent charring or burning. Instead of purchasing a pit, you can build a barbecue pit out of a drum. Remove the large bung from the drum lid. Scribe a line with a marker all the way around about 2 inches down from the top. Make a small cut about 3 to 4 inches long on the line at the closest point to the large bung. Place a hinge vertically with the pin centered on the cut. Mark hinge screw holes with the marker. Remove the hinge and drill the pilot holes. Install the hinge with a carriage bolt, washer and nut in each hole. Continue the top cut all the way around the drum. This will make your lid. Sc
