How Do You Make Banana Coffee Cake?
Bananas make this coffee cake moist and delicious. It’s a different use for ripe bananas and a new twist on breakfast. INGREDIENTS: 1 cup softened butter or margarine 1 cup granulated sugar 2 large eggs 1 ripe banana, peeled and mashed 3/4 teaspoon baking soda 1/2 teaspoon salt 1 1/4 cup all-purpose flour In the bowl of an electric mixer, cream butter and sugar together until light and fluffy. Add eggs and banana, mix thoroughly. Stir in dry ingredients. Pour into a greased 9×9 inch pan. Bake at 350 degrees for 30 minutes, or until a toothpick inserted near the center of the cake comes out clean. Remove from oven and cool on a wire rack. Before serving, sprinkle lightly with powdered sugar if desired.
