How Do You Make Baked Lemon Chicken?
I love lemon chicken, and have experimented with different ways of making it. The baked chicken is positively the best. Rinse chicken and pat dry. Squeeze lemons into a cup. Add butter, 1/2 tsp. lemon pepper seasoning, and about 1 tsp. grated lemon peel. Place in microwave until butter is melted. Strain mixture and add 2 Tbs. olive oil. Using flavor injector, season chicken by injecting butter mixture into meaty parts. Sprinkle lemon pepper seasoning into chicken cavity, and put remaining squeezed lemons inside the chicken. Tie legs together with string or a large clean safety pin. Sprinkle lemon pepper seasoning all over outside of chicken, and rub with remaining butter mixture, or olive oil. Place chicken on a rack inside a roasting pan and bake until chicken is tender and juices run clear.
