If you love fudge, and Bailey’s Irish Cream, as much as I do then you’ll love this fudge. It is so good that we always have to make 5 lbs. of it at a time. So, be warned , this recipe makes a lot of fudge. (To make 1/2 as much of this fudge, just use 1/2 as much of each ingredient that I have listed in the things you’ll need column). Everyone begs to take some fudge home with them though so I always make the 5 lbs, when I make Bailey’s Irish Cream Fudge. In a very large bowl, combine the chocolate chips, marshmallow cream, vanilla, the Bailey’s Irish Cream, and the nuts. Set aside. Line the 10X15 inch pan with foil and spread lightly with butter. In a heavy saucepan, combine the sugar, evaporated milk, and the 1/2 lb. butter. Bring to a boil over medium heat. Cook slowly, while stirring constantly, for 11 minutes. Pour the hot milk mixture over the chocolate chip mixture in the bowl. Stir slowly by hand to blend. Do not use a mixer. Pour into prepared pan. Chill to set. Makes 5 lbs. Ev
