Bailey’s Irish Cream and chocolate together make great desserts. Impress your guests with this creamy mousse. Top with chocolate shavings, or for the kids, top with rainbow sprinkles. Read the instructions a couple of times before preparing, as it is a bit confusing with the different pans and mixing bowls at first glance. Totally worth your time! Directions for chocolate mixture: In a sauce pan, melt chocolate with the Bailey’s Irish Cream, heavy cream and brewed coffee over low heat. Directions for syrup: In a separate sauce pan, simmer sugar and water until candy thermometer temperature reaches 230 degrees F. Remove from heat. In a mixing bowl, beat egg whites until stiff and glossy. Add the syrup mixture to the egg whites and continue to whip until egg whites have increased in volume (this will take at least 6 minutes). Pour the chocolate mixture into this syrup mixture and fold in. Now in a separate mixing bowl, whip the 1 quart heavy cream with 3/4 cup sugar until stiff peaks for
