How Do You Make Authentic Pinto Bean Soup And Refried Beans?
An Hispanic friend of mine gave me this recipe that her Mom makes because once I ate it I craved it! This recipe for Pinto Bean Soup is so delicious. Once you let it cool down to room temperature it turns into thick refried beans for dips, burritos, enchiladas, or whatever you like to make. If you LOVE authentic Mexican cuisine, you will LOVE this recipe! Try it and see. You won’t be sorry! Sift through with hands, 1 lb. of dried Pinto Beans to remove any dirt, pebbles, or foreign objects. Cover beans with water in a large pot plus add extra water to accomodate beans as they swell. Very important to Soak them overnite. In the morning, drain off water from beans in a colander. Rinse beans and pot. Pour beans back into pot and cover with water, plus 2 cups extra. Into pot put in a large spoonful of bacon fat, lots of fresh chopped cilantro, 2 long strips raw bacon that is cut up into pieces, 1 1/2 t. minced garlic, 1 T. salt, 1 quartered onion. Cover.
