PREPARE BEETS: The day before you want to serve this soup: Place beets in a large sauce pan half covered with water. Boil on the stove top until beets are soft and firm and liquid is bright red. Cool. Peel beets. Remove peel. PREPARE VEGGIES: Cube solid beets. Boil navy beans. Chop fresh dill. Add black pepper and other spices you like. Combine all in sauce pan.
