Ingredients: 1/4 c. olive oil (you will need 3 tablespoons extra) 1 large onion, chopped (you can use green onion as well) 3 cloves of garlic, minced 2 pounds of frozen spinach, thawed and drained ( you can use chopped spinach as well) 1/2 c. fresh parsley, chopped 2 eggs, beaten 1/2 c. ricotta cheese 1 c. crumbled feta cheese 8 sheets of phyllo (filo) dough tsp cayenne pepper salt & pepper 1 lemon (optional) Heat 3 tablespoons of olive oil (this is your extra oil) in a large pan over medium heat. Sauté the onion and garlic until the onion is softened. Stir in the spinach and parsley. Continue to sauté for about 5 minutes. Remove from heat and set aside to cool. Pre- heat oven to 350 degrees.
