Apple pie bars are a nice alternative to apple pie at functions or picnics because they can be eaten with your hands and do not require a knife and fork. This recipe makes approximately 18 small apple pie bars so if you are attending a large function, you might want to bake up two batches since they disappear fast. Remember to slice the apples very thin for your apple pie bars to ensure that they become tender during baking. Cut one cup of cold butter into 2 1/2 cups all-purpose flour with a fork in a large mixing bowl. Add 2/3 cup milk and one egg yolk to the flour and butter mixture to form the crust of your apple pie bars. Divide the dough into two balls and roll one of the balls out with rolling pin on a floured surface until it is approximately nine inches by thirteen inches. Line the bottom of a 9 x 13 inch pan with this rectangle to form the bottom crust of your apple pie bars.
