Purchasing ready-made apple cider vinegar in the supermarket is simple and convenient. Once you taste the difference between commercial apple cider vinegar and homemade, however, you may never want anything other than your own homemade vinegar. The process of making apple cider vinegar is not difficult; but it takes approximately one month for the vinegar to ferment. If you pasteurize your vinegar after it ferments, it will keep indefinitely. Pour the apple cider into the plastic bucket. Cover the top of the bucket with the cheesecloth, securing the cheesecloth around the edges of the bucket to hold it tightly. Place the bucket in a warm location with temperatures between 60 to 80 degrees Fahrenheit. Allow the bucket to sit undisturbed in this location. Remove the cheesecloth and stir the apple cider once each day. Leave the vinegar to ferment until it is as strong as you desire. The fermentation process generally takes one month. Pour the vinegar from the bucket into the stockpot thro
