Apple cider cake is delicious and easy to make. It remains moist and scrumptious because of its key ingredient: apple cider. Grease an 8 inch cake pan and preheat the oven to 375 degrees Fahrenheit. Sift the flour and baking powder together in a bowl and add butter. Mix together until the mixture resembles breadcrumbs. Add the sugar, chopped apples and raisins and mix until well-blended. Pour in the cider and egg and mix until well-blended. Gently stir in the raspberries. Pour the batter into the cake pan and bake for 40 minutes. Let the cake cool a bit and then turn out onto a wire rack or waxed paper to finish cooling.
