Agreat “hot” gumbo soup for any time of year! Ingredients: ½ cup uncooked barley 2 cans chicken stock 2 cans Campbell’s Chicken Barley Soup 1 can Campbell’s Cream of Chicken Soup(optional) 1 can diced tomatoes 1 can corn 2 boneless chicken breasts (cut into small cubes) 3 diced Andouille sausages 1 diced medium carrot ¼ cup diced celery 1 cup water chestnuts 1 small white onion, diced 1 garlic clove minced ¼ tsp chili powder ¼ tsp ground ginger ½ cup pepperoni cut in thin strips ¼ cup diced sweet red pepper ¼ cup diced green pepper 1 Small slice, jalapeño pepper, diced ¼ tsp. Paprika 2 bay leaves (while cooking) Marinade chicken overnight (I use my own Cajun spices). Grill chicken & sausages to liking. Combine all ingredients including meats in slow cooker on high for 2-3 hours stirring occasionally. simmer or low for additional 2 hours. For an interesting touch, add a few cubes of cheese in each bowl before serving.
