This is one of those stick-to-the-rib dishes that meat eaters love. A great meal to make for the family on a cool fall day. In a plastic bag, blend together the flour, salt, pepper, and thyme. Place the meat, a few pieces at a time, in the bag and shake to coat well. Heat the oil in a large soup pot and brown the meat well on all sides. Add to the pot all the other ingredients, except the peas and parsley. Bring mixture to low boil, stirring occasionally. Cover and simmer for at least 2 1/2 hours, or until meat is tender and all vegetables are well cooked. If necessary, heat small amounts of additional broth and add as stew cooks. Add peas and cook until they are hot. Serve. Garnish with fresh parsley. Enjoy!
