This cake recipe is a favorite amongst our friends, and they cannot tell that it has virtually no fat. It uses pumpkin instead of eggs and oil. For this reason, it is best to use a spice cake mix, as the pumpkin complements the flavor. However, it is actually surprisingly good with other cake mixes, even chocolate. Empty cake mix into mixing bowl. Put half cup of water in mixing bowl with cake mix. Do not stir yet. Put 15 oz. can of pumpkin in mixing bowl with water and cake mix. Stir vigorously. It will take longer than normal. If this is difficult, use a mixer. Pour batter into cake pan. Follow baking instructions on cake mix box. Usually, the instructions say to bake at 350 for 20 minutes or so. You will lose some of the “low-fat” element, but adding a cream cheese icing makes this recipe outstanding.
