Mexican Stack is a new classic. It is based on a taco salad but with a yummy twist. This is a more Americanized Mexican dish, but you just can’t get enough of it. If you like tacos or taco salad, you will absolutely love this meal. Brown your ground beef/turkey thoroughly. Drain the meat. I find that if I rinse the meat it is a lot less greasy. I also wash out my pan that I cooked it in before I put the meat back in. After you put the meat back in the pan, mix in taco seasoning and water (according to package directions). While the meat is cooking in the taco seasoning, go ahead and make your rice. Once the meat and rice are done it’s time to make you Mexican Stack. For one serving, use a standard dinner bowl, place a handful of corn chips in the bowl. Then add a scoop of rice. Now add your meat. Lastly, you’ll want to add all of your favorite taco toppings.
