Here’s a quick and easy recipe using cupboard staples to make a sponge cake. Sponge cakes are good plain, served with sweetened fruit or iced with a simple glaze. Any way you make them, they are good eating. • Add eggs to a mixing bowl. Beat well. • Add sugar and beat well. • Add the cold water and baking powder. Beat. • Add the flour slowly to the egg mixture and beat until smooth. • Pour into a greased angel food cake pan. • Bake at 375 degrees F for 30 to 35 minutes. • Check to see if the cake is done by gently touching with your finger. It will spring back and look golden. Bake a few more minutes, if the cake is not done. • Cool 15 to 20 minutes before removing cake from the angel food cake pan. Makes 1 cake.
