Packed with fiber and protein, lentils are a healthy and satisfying option for lunch or dinner. Lentils are also inexpensive, especially when purchased in bulk. Follow this Mediterranean lentil salad recipe for a quick and easy dinner or lunch. Pick over the lentils and remove any small stones or grit. Rinse the lentils and add them to a medium-sized pot. Add about four cups of water to the pot and bring to a boil. Once the water is boiling, reduce the heat to low and cover. Cook the lentils on low for about 20 minutes or until tender. Meanwhile, prepare the dressing. Add balsamic vinegar, sun dried tomatoes, oregano, thyme, garlic powder, and salt and pepper to a large bowl. Whisk the dressing until blended. Then, slowly add in the olive oil while continuously whisking until the dressing is blended. Taste the dressing and add more seasoning if desired. When the lentils have finished cooking, drain them and add to the large bowl with dressing. Gently toss the lentils with the dressing.
