This is an old favorite. The bottom is a soft custard and the top is spongy and cake-like. Heat oven to 350 degrees. Beat together the butter and sugar. Add the egg yolks, one at a time, and beat after each addition. Beat in the milk, flour, lemon juice, and grated rind. Beat well. The mixture will still look slightly curdled. Fold in the beaten egg whites. Pour the mixture into a 1 1/2 quart baking dish. Place the baking dish in a pan of hot water. The water should come half way up the sides of the baking dish. Bake for approximately 55 minutes. Cool on rack. Serve topped with whipped cream. Enjoy!
