In your oven-proof skillet, melt ONE tablespoon of the butter. Sauté the mushrooms until they have lost most of their liquid and are browning. You can use canned mushrooms if you wish. If you do so, drain well and sauté only briefly. Set aside. Blend together the eggs, cream, salt, pepper, basil, and parsley. Add to the skillet the olive oil and ONE tablespoon of the butter. Heat skillet until the fats are sizzling. Turn the heat down low and add the egg mixture to the sizzling skillet. Cook eggs, without stirring, until they are firm on the bottom but still slightly soft on top. Remove skillet from heat. Melt the last tablespoon of butter in a small pot.
