How Do You Make An Easy Enchilada Casserole?
The absolute best enchilada casserole you’ve ever had! Brown ground meat thoroughly. Drain well until no grease remains in pan. Place refried beans in separate pan and heat well. Heating will make it easier to spread the beans as well as shorten baking time. Lightly grease the bottom of the casserole dish with a little vegetable oil. After greasing, pour just a small amount (a couple of tablespoons) of enchilada sauce on the bottom of the casserole dish. Place two corn tortillas on the bottom and cut a third tortilla in half to fill in the gaps (you can cut and position them however you want, as long as most of the surface is covered). Spread about half of the refried beans on top of the tortillas, then half of the meat, one-third of the enchilada sauce, and about one or two cups of the cheese (you can make it as cheesy as you want).
