How Do You Make An Eastern Shore Crab Cake?
For those of us who grew up on the Eastern Shore our crab cakes are a real treat and delicacy! If you love crab cakes or crab balls this recipe is a must try! First, you must drain the crab meat to get any access water out of it. You can do this by placing it on a couple of paper towels and blotting the meat to push out the excess water. Once you have done that place the crab meat in a large mixing bowl. Next, add the Old Bay, salt, mayo, Worcestershire sauce, baking powder, and the 1 egg (that should be already beaten). Mix all these ingredients together well. You must now add your bread or bread crumbs. Break up your 2 slices of breads and mix well. If your mixture still looks a little wet and will not form into a patty then you might need to add another slice of bread until you can form into patties for frying. Heat your oil in a large frying pan over medium heat. Place enough oil in the pan to cover half of the patty. Wait until oil is hot before you begin frying your crab cakes. C
