Quick easy way to prepare an authentic Puerto Rican SPAM Omelet! I get tons of requests for this dish during the holidays – great for eves and midday gatherings! Heat non-stick skillet on medium heat. Add olive oil heat until medium hot. Add onions, green pepper and tomato to pan – fry until onions are clear (about 1-2 minutes) add garlic and cilantro mix for about 30 seconds. Scramble eggs in separate bowl – do not over beat – add 1 packet of Sazon, salt and pepper combine until mixture becomes a consistent bright orange (about 30 seconds) Scrape mixture in pan to the side and gently add egg mixture to pan. Scramble eggs with mixture once bottom appears set. Add cheese to pan – tear cheese into pieces and spread about omelet. Mix once more. Remove from heat. Serve atop toast/english muffin for breakfast, crackers for brunch or white rice for dinner. Enjoy!
