How Do You Make Amish Potato Salad?
We learned to love Amish potato salad when visiting friends in the Lancaster, Pennsylvania area. We’ve tried several versions and this is our favorite. We love the sweet-sour taste of the dressing and the yellow color. If you want even more yellow, use Yukon Gold potatoes! Step 1 Fill a large cooking pot with cold water, add potatoes, bring to a boil, reduce heat and simmer until tender-about 20 minutes. Drain potatoes in a colander and set aside to cool Step 2 Whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until dressing is thickened, about 10 minutes. Remove from heat, and stir in butter. Refrigerate until cool, then stir in mayonnaise. Step 3 Dice potatoes into medium-sized chunks. In a large bowl, combine the potatoes with the onion, celery, carrots, celery seed and hard-cooked eggs. Fold in the dressing. Chill before serving to allow the flavors to blend.
