Most of the time, it is safer and easier to make these items at home. These Snickerdoodles are not only dairy free, they are delicious. This recipe will make 48 small or 36 large cookies. Preheat oven to 400 degrees. Its important to let the oven fully preheat. Cream together the shortening, margarine, eggs, vanilla and 1 ½ cups of sugar in a large bowl. Add the flour, cream of tartar, soda and salt. Shape the dough into small balls, approximately 1 ½ inches in diameter. Stir together the remaining 2 tablespoons of sugar with the 2 teaspoons of ground cinnamon. Roll the balls of dough in the cinnamon/sugar. Place 2 inches apart on an ungreased cookie sheet. Silpat pads work very well for these cookies. Bake 8 to 10 minutes, do not let them cook too long or they will get hard. If they are not overcooked, these cookies will stay soft
